Oatmeal Cranberry Pecan Cookies

 Ingredients:

1 package of Betty Crocker Oatmeal Cookie Mix, per instructions

Use a stick of butter instead of margarine 

Add 1/2 cup of dried cranberries 

and 1/2 cup of chopped pecans

Directions:

Bake at 375 degrees F for about 15 minutes or until lightly brown.

White Chocolate Chip Macadamia Nut Cookies

Ingredients:

  • 2 1/4 cups all-purpose flour
  • teaspoon baking soda
  • 1/4 teaspoon salt
  • cup light brown sugar, firmly packed
  • 1/2 cup white sugar
  • cup salted butter, softened
  • large eggs
  • teaspoons pure vanilla extract
  • cup coarsely chopped macadamia nuts
  • 1 1/2 cups white chocolate chips
  • Directions:
  • Preheat oven to 350°F.
  • In medium bowl combine flour, soda and salt. Mix well, set aside.
  • In a large bowl with a mixer blend sugars at medium speed. Add butter and mix to until it forms a grainy paste, scraping down the sides of the bowl. Add eggs and vanilla, and beat at medium speed until fully combined.
  • Add the flour mixture, macadamia nuts and white chocolate chips, and blend on low speed until just combined. Do not over mix.
  • Drop by rounded spoonfuls onto ungreased cookie sheet. Bake for 10-12 minutes or until edges begin to brown. Move immediately to cooling rack.

Ginger Snaps

Ingredients:
2 cups sugar
1  1/2 cup butter
1/2 cup molasses 
2 eggs
4 tsp soda
1 Tbsp ginger
1 tsp salt
2 tsp cinnamon
4 cups flour

Directions:

Roll in balls in sugar (nutmeg). Bake 350 for 8 minutes. Slam pan on counter.

Magleby's Chocolate Chip Cookies

Cream:
1/2 cup shortening
1/2 cup butter
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
2 tsp vanilla

Add:
1 tsp salt
1 1/2 tsp baking soda
2 cups 3 Tbsp flour
2 cups chocolate chips
1 cup chopped nuts  (I substituted English toffee bits)

Bake at 350 degrees for 10 minutes.  Do not over bake!

Cadbury Chocolate Chip Cookies

Ingredients:
1 cup butter, softened
1 1/2 cup sugar
3/4 cup brown sugar
3 eggs
3 tsp vanilla
1 1/2 tsp salt
1 1/2 tsp baking soda
1 1/2 tsp baking powder
3 1/2 cup flour
2 packages white chocolate chips (I used one package)
1 package milk chocolate chips
1 package Cadbury Mini Eggs

Directions:
Place Cadbury Mini Eggs in a large ziplock bag, with the handle end of a spoon or knife, smack each egg until they pop in half.  Mix the wet ingredients, add dry ingredients, and then the chocolate chips/eggs.  Roll into 1 inch balls or use a medium cookie scoop.  Bake at 350 degrees for 9-10 minutes and until the edges are slightly browned.  Let them rest on the pan for 1 minute more then transfer to a rack to cool.  Yields 48 cookies.

Sugar Cookies

Ingredients:
1 cup butter
2 eggs
1 tsp vanilla
1 tsp lemon
3 1/2 cups flour (add more or less to handle)
1 cup sugar
3 Tbsp milk
1 tsp baking soda
1/2 tsp salt

Direction:
Mix to have consistency of dough as soft as can be handled.  Roll to 1/4 inch thickness and place on a greased cookie sheet.  Bake at 350 degrees for 10 to 12 minutes.  Do not over bake (just until dough sets up is best).  Frost.

Sugar Cookies

Ingredients:
1/2 cup butter
1 cup sugar
1 egg
1 tsp vanilla
1/2 cup sour cream
3 1/4 cup flour (or more to handle)
1 tsp baking soda
1/2 tsp salt

Directions:
Mix butter, sugar, egg, vanilla, and sour cream.  Then add flour, baking soda, and salt. Refrigerate.  Roll 1/2 inch thick.  Cut with cookie cutters.  Bake on cookie sheet for 350 degrees for 9 minutes.

Frosting

1/2 cup butter
1/2 cup shortening
1 tsp vanilla
4 cups sifted powder sugar
2 Tbsp milk
Food coloring

Cream butter and shortening.  Add vanilla then powder sugar mixing after each cup added.  Add milk and food coloring.  Frost cookies.

Snicker Doodles

Ingredients:
1 cup shortening
2 eggs
1 cup sugar
2 tsp cream of tartar
1/4 tsp salt
1 tsp baking soda
2 3/4 cup flour
3 Tbs sugar
1 tsp cinnamon

Mix together the first 3 ingredients then sift in the cream of tartar, salt, baking soda, and flour.  Roll dough into balls then roll in 3 Tbsp sugar and 1 tsp cinnamon.  Press with a fork and bake on a cookie sheet at 400 degrees for 10 minutes.

Spiced Pumpkin Cookies

Ingredients:
1 cup shortening
1 cup sugar
1 cup canned pumpkin
1 egg
2 cups flour
1 Tbsp pumpkin pie spice
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt, if desired

Directions:
Beat shortening and sugar until fluffy.  Add pumpkin and egg then beat until combined.  Combine flour, pumpkin pie spice, baking powder, soda, and salt.  Add and beat until combined.  Spoon onto an ungreased cookie sheet (I use my ice cream scoop).  Bake at 375 degrees for 8 to 10 minutes or until the tops seem firm.  Remove and cool on wire rack.

Glaze:
1/2 cup packed brown sugar
3 Tbsp butter or margarine
1 Tbsp milk
1 cup powdered sugar
1 tsp vanilla
chopped walnuts

Combine brown sugar, butter, and milk in a sauce pan.  Heat over medium heat stirring constantly until butter melts.  Remove from heat and stir in powdered sugar and vanilla.  Add a few drops of warm water if glaze is too thick.  Glaze tops of cookies and top with chopped walnuts.

Recipe is from one of my neighbors when I lived in Minnesota.

Peanut Butter Blossoms

Ingredients:
1/2 cup butter
1/3 peanut butter
1/2 sugar
1/2 brown sugar
1 egg
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
1 3/4 cup flour
Additional sugar
Chocolate kisses

Directions:
Cream butter, peanut butter, sugars; add eggs and vanilla.  Blend in dry ingredients gradually.  Mix well.  Shape into small balls.  Roll in additional sugar.  Place on greased cookie sheet.  Bake at 375 degrees for 8 minutes.  Remove from oven.  Place chocolate kiss on top and press into cookie.  Return to oven for 2-4 additional minutes.

No Bake Cornflake Cookies

Ingredients:
3/4 cup sugar
3/4 cup white karo syrup
     Bring to a boil in a sauce pan.
1 cup coconut
1 cup peanut butter
4 cups corn flakes
     Mix together with sugar/karo syrup mixture.  Drop spoonfuls on wax paper and let set.

Peanut Butter Cookies

Ingredients:
1/2 cup butter
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
1/4 tsp salt
3/4 baking soda
1 1/4 flour
1 cup peanut butter chips
1 cup white chocolate

Directions:
Mix together ingredients.  Bake at 375 degrees for 8-10 minutes.

5 cups oats

Directions:
Mix together.  Bake at 400 degrees for 6-8 minutes.

Chocolate Chip Cookies

Ingredients:
2/3 cup shortening
2/3 cup butter
1 cup brown sugar
1 cup sugar
2 eggs
2 tsp vanilla
1 tsp baking soda
1 tsp salt
3 cups flour
12 oz chocolate chips

Directions:
I use my bosch mixer and blend the shortening, butter, brown sugar and sugar together.  Then I mix eggs, vanilla, baking soda, and salt.  Next, I blend each cup of flour separately.  I usually add a little more flour until it pulls away from the sides of the bowl.  Then I add the chocolate chips last.  I use my ice cream scoop to place 12 balls of dough on a cookie sheet and bake at 375 degrees for 10 minutes or until just starting to turn golden.  I like mine soft.
